Zucchini Wraps with Creamy Tzatziki

Zucchini Wraps
Ingredients:
- 2 zucchini, sliced thin
- Spinach
- 1 avocado
- Chicken (grilled, baked, or shredded)
- Tzatziki sauce (recipe below)
- 1 cup mozzarella cheese, shredded
- 1 tsp olive oil
- Pinch of salt and pepper
Directions:
1. Prep the zucchini wrap base: Slice zucchini into thin strips. Lay them in a 5 x 4 slice rectangle on a parchment-lined baking sheet, overlapping so there are no gaps.

2. Season & bake: Lightly drizzle olive oil over the zucchini and season with salt and pepper. Sprinkle cheese evenly over the top.

3. Bake: Cook at 350°F until the cheese is golden and bubbling, about 25 minutes.

4. Cool & fill: Let the baked zucchini wrap cool slightly. Fill with spinach, avocado slices, and chicken. Drizzle with tzatziki, roll it up, and enjoy!

Creamy Homemade Tzatziki
Ingredients:
- ½ cup finely grated cucumber
- 1 cup thick whole milk Greek yogurt
- 1 tablespoon fresh lemon juice
- ½ tablespoon extra-virgin olive oil
- 1 garlic clove, grated
- ¼ teaspoon sea salt
- 1 tablespoon chopped fresh dill
Directions:
1. Place the cucumber on a clean towel and gently squeeze to remove excess water.
2. In a medium bowl, combine cucumber, yogurt, lemon juice, olive oil, garlic, salt, and dill.

3. Chill until ready to serve. Add to zucchini wraps!
