Chikadee Potato
  Recipe from City Bites, Oklahoma City, OK

 
 

INGREDIENTS:

    1 large IdahoŽ Russet Burbank Potato, 40 Count 3 oz. Chicken breast, grilled, cut into 1/4" strips 1/4 cup Salsa 1/4 cup Cheddar cheese, shredded 1 Tbsp. Sour cream Salt and pepper to taste Cilantro, chopped for garnish

DIRECTIONS:

  1. Bake the potato until cooked, about 1 hour at 400°F. Internal temperature of 210° F indicates doneness.
  2. Split open the top with a fork.
  3. Carefully pile on chicken breast, salsa, Cheddar cheese, sour cream, salt, pepper and cilantro.
  4. Serve immediately.
